While I like to occasionally give Tony a bad time for this... it is all in good fun. Tony is such an amazing daddy and Oliver just adores him. He can always get him to smile and coo. I love watching them interact and know that they are my boys. Forever!

So, back to Tony. He doesn't read the blog very often so I feel pretty comfortable talking about him on here. Tony has been so wonderful throughout our transition into parenthood. Not only does he drop everything to play with Oliver, he comforts him in the middle of the night, gives him baths, and never complains when a diaper needs to be changed, yet again. He's a great dad and also a fantastic husband. I am so lucky! Tony is almost always making dinner, doing the dishes, and taking out the trash. He comes home from work and jumps right in with whatever I need help with. I know I couldn't function without him!
So here is my super embarrassing confession: I haven't cooked in 12 weeks. Like legitimately cooked. Sure, I've stuck a frozen lasagna in the oven or thrown together a sandwich or two, but I haven't cooked. Tony deserves some home cooked meals again, and I finally feel like I have a hang of Oliver's schedule to where I can cook dinner without being overwhelmed.
Anyone have any dinner recipes that are easy to make? Perhaps something that only requires one hand if the baby is fussy? :) Maybe we should get a crock pot....

Get a crock pot! They are the easiest and most wonderful meals. We make really yummy tacos in the crock pot...yum. Dane also loves mile high potatoes. I cook them for 8 minutes in the microwave and top them with tons of veggies, sour cream and cheese. Easy. Dane also loves grilled chicken and rice. Easy. We also love Boca burgers (those frozen veggie things). Easy.
ReplyDeletePS I just started REALLY cooking again, and Boss is 6 months old. You will get there, and probably much sooner than I did... oops!
Thanks for the suggestions! Tony loves potatoes so that is a great idea. I think I'm going to take the plunge and get a crock pot. Oliver is usually fussy around the time I should be making dinner so I think it would help a lot!
